My counselor just told me today that my school doesn't offer French 3 even though last semester she allowed me to pick french 3. However I put that on my application for a bunch of schools save Stanford. Do I email the counselors about the change?

It really matters as to WHERE you indicated you took French III. If you put it in your STARS, I believe you can go in and either change it yourself or request it to be changed. If you put it in your CommonApp, you can directly email the admissions office and let them know of your transcript change.
